The Dubai chocolate trend continues to evolve, with a new chewy cookie recipe transforming its familiar pistachio and kadaif combination into an eye-catching foodservice treat.
Created by Junya Abe, the recipe is closer to a filled confection than a traditional baked cookie. A crisp pistachio centre is enclosed in soft chocolate marshmallow dough before being finished with a dusting of deep red cocoa powder.
The filling combines butter-roasted kadaif with Pailleté Feuilletine, creating layers of delicate crunch. Pure Pistachio Paste supplies an unsweetened, concentrated nut flavour, while W2 white chocolate adds creamy notes of milk, caramel and vanilla.
An optional amarena cherry can be placed in the centre, introducing acidity and fruitiness to balance the richness of the pistachio and chocolate.
Instead of conventional cookie dough, the outer layer is made by melting marshmallow with butter, skim milk powder and Velvet Rouge Ultime Cocoa Powder. The cocoa delivers a roasted profile and deep red colour, giving the finished product a distinctive appearance without requiring an elaborate glaze or decoration.
