Goodman Fielder Foodservice has introduced Olivani as a new range for Australian professional kitchens. The range is produced from olives grown in Andalucia, Spain and includes extra virgin, pure and pomace olive oils intended for different applications.
Olivani Extra Virgin Olive Oil is made entirely from extra virgin olive oil, with no blending or refining, and is cold-extracted below 27 degrees Celsius. Goodman Fielder describes it as fruity and smooth and recommends it for finishing dishes, dipping and applications where the flavour of the oil needs to remain noticeable. It is supplied in a four-litre format.
The Pure Olive Oil has a milder profile with earthy and peppery notes. Its more neutral character makes it suited to basting, marinades and sauces where chefs want the qualities of an olive oil without allowing it to dominate the dish. It is also available in a four-litre pack.
For higher-heat and higher-volume applications, the five-litre Pomace Olive Oil is positioned as a frying alternative to seed oils. Its restrained flavour is designed to support the food rather than compete with it.
The practical value of a three-tier range is the ability to allocate oil by task. A kitchen could reserve extra virgin for dressings, bread service and final garnishes, use pure olive oil through marinades and sauces and direct pomace oil to cooking applications. That approach can help protect both flavour and cost per plate.
As with any new oil, chefs should test it under their own service conditions. Smoke performance, flavour carry, filtration routines and cost per usable litre will vary according to equipment and menu. The most useful comparison is not simply the price of the tin, but how consistently the oil performs in the job it has been selected to do.
